Overview

This standard covers the skills needed for you to manage product changeovers in food and drink manufacture and the associated supply chain.


A flexible production line that can adapt to changes in demand is key in the fast moving demand led food and drink manufacturing sector. Product changeovers regularly have to be in a sequence dependent on what is being produced to reduce cross contamination/flavour  taint/disruption/time  and increase efficiency. Minimising downtime and maintaining an effective production line is essential to the cost effective operation of a food business. You must know how and be able to prepare to manage product changeovers including the monitoring of materials, staffing and additional resources. You must also know how and be able to monitor the product changeover including compliance, quality and productivity, evaluating the efficiency of the changeover and making suggestions for improvements where possible.


This standard is for you if you work in food and drink manufacture and/or supply operations and are involved in managing product changeovers in food manufacture.


Performance criteria

You must be able to:

1. source product changeover documentation including product specification, equipment and staffing requirements
2. adhere to organisational changeover procedures
3. complete product handover documentation adhering to organisational requirements
4. liaise with colleagues to ensure the availability of materials, resources and storage 
5. carry out product changeovers adhering to organisational health and safety requirements
6. keep channels of communication open at all times during product changeovers
7. monitor the quality of product after product changeovers
8. solve problems arising from product changeovers
9. assess the product changeover process and determine where improvements could be made
10. communicate possible improvements to relevant people for discussion and action if applicable


Knowledge and Understanding

You need to know and understand:

1. the organisational and regulatory requirements relating to the management of product changeovers
2. the organisational methods of communication and how to use them
3. how to source product specifications relating to product changeovers
4. why it is important to ensure documentation relating to product changeovers, productivity, quality or key performance indicators is completed adhering to organisational requirements
5. the importance of liaising and communicating with colleagues at all staffing levels when carrying out product changeovers
